How To Use: Baharat (from Arabic - plural form of the word bahar - "spice") - this sharp intense spices blend, based on a high content of black pepper, is a universal condiment in the Persian Gulf and North Africa. Baharat, also called Lebanese seasoning, is usually fried in vegetable oil and added to couscous, rice pilaf, soups, tomato sauces, stews, as well as quince, chestnuts, apricots, lentils. As a dry sprinkle Baharat is used for lamb skewers and grilled fish, chicken and other poultry.
Baharat, along with Ras el hanout and Za'atar, are the most famous spice blends in Arabic cuisine. We present you a classic Baharat recipe, for which it is known in Western cuisines. Instead, there are many local varieties of this mixture: Turkish Baharat includes a large proportion of peppermint. In Tunisia, Baharat is a simple mixture of dried roses and ground cinnamon, often combined with black pepper. In the Arabian states along the Persian Gulf, the so-called Gulf Baharat kebab (kebsa) mixture may also include lumi or "black lime" (ordinary lime cooked in salt water and dried in the sun) and saffron.
